It Looks Like Goop, Tastes Like Heaven
My new favorite meal consists of 1/2 cup of vegetarian chili on a whole wheat tortilla with lettuce and peach salsa. It may sound like a horrendous mix, but it’s heavenly. All my recipe items are from Trader Joe’s but you can easily substitute with regular store brands (but be cautious the items are similar in nutritional breakdown).

Mmm Good Mcyummerson Burrito Recipe:
- 1/2 cup of Trader Joe’s vegetarian chili = 95 calories, 3 g fat, 3.5 g fiber, 4 g protein (side note — if you’re watching your sodium intake, note that each 1/4 cup has 1/8th of the FDA’s sodium limits)
- 1 Trader Joe’s Hand Made Whole-Wheat Tortilla = 140 calories, 5 g fat, 3 g fiber, 3 g protein
- 2 tablespoons Trader Joe’s Spicy, Smoky, Peach Salsa = 15 calories, 0 g fat, 0 g fiber, 0 g protein
- 1 cup Trader Joe’s Organic Herb Salad Mix = 12.5 calories, 0 g fat, 1 g fiber, 1 g protein
- Total: 262.50 calories, 8 g fat, 7.5 g fiber, 8 g protein
A note on the chili — it is DELICIOUS! My twin tasted it without knowing it was vegetarian and thought it must be some fattening, meaty chili, and I was like, “yea right, silly one! It’s got tofu!” Muahah!
p.s. you will not appear graceful eating this so do not attempt this on romantic homemade dinner night unless your significant other considers chili face attractive…
