Now on to some yummy eats…Enter my sweetie, the Sweet Potato:

Nutritional information for one large: 162 calories, 0 g fat, 6 g fiber, 4 g protein

“This food is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.”

I like to just slice ‘em, with the skin on, like French fries, season with pepper and paprika, place on a cookie sheet lined with foil sprayed with Pam, and cook at 450 F until the crispy texture I like (about 30 mins).

Then what do you do if you want to create a meal out of them?

That would be an omelet made from egg substitute, raw broccoli and sweet potato French fries chopped into bits.  It was heavenly!

Just curious — has anyone caught the show “Dance Your Ass Off” and what did you think? I have it on in the background right now…and I want to like it, but I find myself wanting to throw my shoe at the t.v…just sayin’…

Seriously, I did just subscribe (ding) and altho my “I Do Things So You Don’t Have To” format doesn’t allow for easy on-the-fly posting, I will list my three healthy items I can’t live without:

spinach (cooked or raw, in soups, omelets, salads, ANYthing)
olive oil
apples (the only fruit I like)

That omelet looks delicious, but I am not sure about the sweet potato fry bits.

I make sweet potato fries like that too! But I use cumin and black pepper on mine, and parchment paper rather than Pam. Never thought of adding them to an omelet!

I’m going to Texas in August and to be honest the most exciting thing about it will be visiting Whole Foods for the first time ever. We don’t have them in my area of Canada.

How can someone live in the same building as a free 24/7 gym plus have access to doctor, diatician, trainer PLUS learn a new dance routine each week & only lose a pound or two?
You can really tell who is working it & who is just…who knows what they are doing. :P
The dancing…oh my. I don’t know what to say about that other than like an accident on the highway it is really tough not to gawk for just a moment & think OMG

Okay, foods.
1) dried, unsweetened mangos
I don’t know why but I just love the flavor & 2 little pieces really *do it* when I need something sweet — and they aren’t even super duper sweet!
2) fat free yogurt
Love it with my Kashi in the morning – more filling than milk
3) Kashi Go Lean Crunch
Have it almost every morning. Stays with me, tastes good & has lots of crunch

I’ve already added you to my google reader (no small trick that, it didn’t automatically detect the feed when I hit my “subscibe” button) … came across you on another blog about a week ago.

Anyway, here are my three:

Organic, free range eggs– I need protein, and eggs are just the thing… except I’m allergic to the antibiotics most eggs are treated with.

Warm water therapy pool– When I started warm water therapy I couldn’t lift my legs high enough to go up the stairs and I walked with two canes. I gave the canes away a year ago, and now jog up stairs. I still do a minimum of 6 hours a week in the pool, usually 10, to keep strong and flexible.

Organic chicken (just about anything)– Sure, there’s a lot you can do with boneless, skinless chicken breasts (and I do!) but sometimes I like the option of throwing a chicken sausage on the grill or having a chicken burger instead of a hamburger.

Oh, and I’m adding that link now, please count all three entries!!!! I’d LOVE me some WHOLE FOOD!

1. Sigg Water Bottle *can’t leave home without it!
