Recipe for Lemon & Basil Brown Rice

Hey guys!

I thought I would share this recipe with you for lemon and basil brown rice with garbanzo beans since I enjoyed it so much!

Lemon & Basil Brown Rice with Garbanzo Beans

Ingredients

  • 1 cup lightly packed fresh basil leaves (I got mine from Trader Joe’s) — 6 calories, 0.1 g fat, 0.8 g fiber, 0.5 g protein
  • 2 tablespoons freshly grated Parmesan cheese — 43 calories, 2.9 g fat, 0 g fiber, 3.8 g protein
  • 2 tablespoons lemon juice — 30 calories, 0 g fat, 0.5 g fiber, 0.5. g protein
  • 2 tablespoons extra-virgin olive oil — 240 calories, 28 g fat, o g fiber, 0 g protein
  • 4 cloves garlic, minced — 18 calories, 0.1 g fat, 0.3 g fiber, 0.8 g protein
  • 3.5 cups cooked brown rice (1.25 cups uncooked) –  758 calories, 6.1 g fat, 12.3 g fiber, 17.6 g protein
  • 1 cup cooked garbanzo beans — 269 calories, 4.3 g fat, 12.5 g fiber, 14.5 g protein
  • salt and pepper
  • Total nutritional content — 1391 calories, 41.5 g fat, 26.4 g fiber, 37.7 g protein
  • Five large servings. Per serving — 278.20 calories, 8.3 g fat, 4.92 g fiber, 7.54 g protein

Directions

  • In a small saucepan, bring 2 cups water to boiling. In a small bowl, combine cold water and ice cubes to make an ice bath. Add the basil to the boiling water; stir once and drain immediately. Place basil in the ice bath to cool quickly. Gently squeeze out any excess water.
  • Place basil in a food processor. Add Parmesan cheese, lemon juice, olive oil, and garlic. Cover and process until nearly smooth.
  • In a medium saucepan over medium heat, stir together cooked brown rice and garbanzo beans. Add basil mixture; stir to coat. Season to taste with kosher salt and black pepper. Squeeze a lemon over the final product to add a nice kick.

September Goals Update

  • Here’s the gist – From Monday through Sunday of last week, I did cardio every day except one, running at least 3 miles each time and up to 5 on one day.  Strength training only occurred two times, for 20 minutes each time, during the week.  Here’s what I would like to change — I would like to run more miles, but run less consistently.  In other words, I think I’d like to try doing longer runs, but only a few times a week instead of everyday (I did that before and ended up injured).  I would also like to fit in longer stretches of strength training, not just 20 minutes, but I have to figure out what is going to work in the long-haul.  This is a transition period for me and I am learning to adjust to my life’s current insanity.  I will cut myself slack for last week — but this week has to be better. Also, I have been adamantly reading the ingredients of everything I put into my mouth that comes from a package.  Wikipedia and Google are a little sick of my “what is…” queries.  All in all, most things I eat don’t have things I’d rather not eat in them.  I have, however, been a little weirded out by some of the things in even our most beloved “health” brands.  More to come on that in later posts… :D

For my half training (12 weeks), I did 2 shorter runs (3-5 miles), 1 speed workout (3-5 miles of intervals or tempo runs), 1 long run (5-12 miles), and 1 day of cross training. Also, I vowed to fit 2 yoga sessions and 2 hours of strength training in there too (and most weeks I did it). I teetered on the brink of exhaustion some weeks but never felt close to injury.

After thinking about it I would cool it a bit on the cross training at the end (make that almost another day off, maybe some yoga and strength that day, nothing poundy) and possibly take one of the easy runs inside to the treadmill to be easier on my legs. Personally, I wouldn’t suggest doing more than one long run and one hard run per week. Some runners swear by 7 days a week training for races but I am so not there (yet, maybe ever). I need my 2 days off unless my workouts are really low impact.

Just some advice. Take it or leave it. :)

A while back, I decided to do only 4 days of cardio but longer cardio sessions because actually I hate cardio but I do it for the heart, lungs & more. I am a weight person as you know. You can actually up your weight workouts & fit more in by doing circuit training and/or multi joint moves like a squat with a shoulder press & all kinds of variations thereof for different body parts.

I am not a big rice eater but I love the brown stuff way more than the white.

Goals for September… I am still trying to do 1 free weight wide grip pull-up but it may not happen this month. I did get 3/4 of a reverse close grip full body pull-up. I just started working towards this about 3 weeks ago.

I like Basmati brown rice with some wild rice grains thrown in for texture and colour.

My husband used to dislike brown rice, but he’s definitely coming around. I just started making it more (I don’t have any special recipes, I usually have make it for under curry or something similar and find that he likes it more when we add veggie or chicken broth when it is in the rice cooker) and he seems to be developing a taste for it. Telling him about the health benefits over white rice helps too, I think. I love brown rice and I’ll definitely be making this recipe soon!

It’s not an official goal, but I’m trying to increase the amounts I’m running at a time (I’m loosely doing C25K).

I run 3 times a week, usually 7 miles at the gym. I was gong to try to up it to 8 miles 3 times a week but imma have to watch this knee and see. May do bikIng instead. Let me one how you like the spin class. Take water and a towel bc you’ll be drenched in sweat and definitely push yourself (resistance and pedal fast).

I don’t like brown rice, but I’ve only tried a couple brands. I’ll have to try it again.

I think your new goals are great — It will be a lot let stress for you to devote a few days a week to running rather than trying to cram it in to everyday. Let us know how that goes for you, love!

that recipe looks sooooo good – i love the mix of lemon and basil. i found ‘lemon basil’ at the farmers market a couple weeks ago and it was divine!

I’m too distracted by the gorgeously green colour of that rice to pay attention to anything else right now.
