Breaded Sesame Tofu
Hey guys!
The winner of the Allens’ veggies contest is Junghwha! Congrats; I will e-mail you.
I have mounds of news I’ve culled related to the health world and am compiling it all to share later today. So much interesting stuff! For now, I wanted to share the recipe for the meal I prepared for my mom for mother’s day. She loved it and so did I!
Ingredients
- 1 package (about 15oz or so) firm tofu, drained
- 2 tbsp. sesame seed oil
- 2 tbsp. sesame seeds
- 2 tbsp. light sodium soy sauce
- 1/2 cup panko bread crumbs
- 1 tbsp. cumin
- Salt and pepper to taste
Directions
- Preheat oven to 450 degrees.
- Drain tofu and pat dry. Slice into bite-sized pieces.
- In medium-sized bowl, mix all ingredients together except tofu and stir.
- Add tofu to bowl and gently use spoon to coat the tofu.
- Place tofu on cookie sheet lined with foil and sprayed with non-stick cooking sheet.
- Cook until crispy and golden brown.
Served with a side of gallo pinto (minus the egg; add sauteed zucchini) and avocado
Enjoy!
Two things from the viral media world I wanted to share:
1. Check this kid out — I can’t wait ’til he makes his first album; I’m already a fan. The apathetic faces of his peers mixed with the one girl who seems to have fallen under his spell, cracks me up.
2. Check out this commercial — It left me teary-eyed and moved.
TGIF!
