Simple & Unique Vegan Biscuits
Hey guys! Happy father’s day to all the dads and soon-to-be-dads out there!
There comes a day in every young girl and boy’s life when he or she must learn that biscuits don’t just magically get their biscuit shape from the Pillsbury cherubs or dough fairies. No, no siree. Apparently there is this little gadget called a…*dun dun dun*…BISCUIT CUTTER!

Dude, I’ve been baking since straight out of the womb and I never knew such a thing existed. So, when I decided to try making biscuits, and found myself without a biscuit cutter, I cried a little to the cooking gods, but quickly wiped my tears and moved on.
If you guys are looking for a unique dish to bring to your father’s day celebrations, I would totally recommend VegNews’ Coconut Curry Biscuits (here). I loooved them because they were simple to make and delicious to taste! Since the directions ask that you use this elusive biscuit cutter I, very chef- and professional-like, bypassed the whole rolling out of the dough and simply plopped lopsided balls of dough on a cookie sheet and called it a day. Like a cookie would taste any different if it were lopsided, ya know what I mean?
Deformed yet delicious. Standard size is so passe.
I’ve listed the recipe and directions, below, verbatim from VegNews. My notes are italicized.
Ingredients
- 2-1/2 cups unbleached white flour I’d use whole-wheat pastry flour, instead, for health reasons.
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon curry powder Trader Joe’s is now selling this!!
- 3 tablespoons soy margarine
- 1 cup coconut milk I used light coconut milk; Trader Joe’s sells!
- 1 teaspoon maple syrup
- 2 tablespoons water
Directions
- Preheat oven to 400 degrees.
- Combine flour, baking powder, salt and curry powder. Cut in margarine. Stir in wet ingredients until dough is formed. Turn onto work surface and knead for about 30 seconds. Pat or roll out to 3/4-inch thickness and cut with a biscuit cutter to make ten biscuits. Bake for 12 to 14 minutes in a preheated oven.
My boyfriend really enjoyed the biscuits alongside a standard dish I make for him — brown jasmine rice cooked with toasted sesame seed oil & Tofurkey vegan Italian sausage. The smiley-face pic was his creation, of course

I tend to use my egg poacher rings for biscuit cutters, hehe. Or else I just plop ‘em down on the pan with a big spoon. The more deformed, the better
