Hummus Quesadillas
Hey guys!
I wrote about hummus quesadillas over a year ago, but it was only in passing and I didn’t truly celebrate these delectable and deserving creations. Today, that changes!
Get some tortillas. Corn, whole-wheat, brown rice, whatever!
Get some hummus. Plain, spicy, eggplant, bell pepper, whatever you’re craving!
Get a pan. Spray with non-stick spray, heat over medium-heat.
Go nuts. Slather half of tortilla with 1-2 tbsp. hummus, fold in half and cook each side ’til as crispy as you like. Top with salsa, avocado, (soy) sour cream, jalapenos, and MORE HUMMUS.
Eat two of these suckers for only around 250 calories.
