Fit Bird Southwest Salad
What does a Southwest-inspired salad have to do with birds that exercise, you ask? Not much really
But I’ll explain.
Once on a camping trip with some girlfriends, I assumed my alternate identity as an English expatriate (don’t ask) and gallivanted around while throwing around the terms “crisps,” “chips,” “crumpets” and “veg” to showcase my vast (hah) knowledge of English jargon (actually, at the time I was obsessed with BBC’s “You Are What You Eat,” and I simply regurgitated all terms used on it!
). Fast forward some 20 or so minutes later and I encountered an actual English fellow! What are the chances?! He saw right through my accent (duh) and, when his bout of laughter ended, informed my friends and me of an awesome English phrase that I still use to this day – a “fit bird” – which is a term used to describe an attractive woman. So, fit birds, let’s move on with this recipe, shall we? I love this salad because you only have to use a few chips (American chips, not English chips, which are French fries!) to infuse the entire salad with that “taco salad” crunch – without all the added nonsense of run-of-the-mill taco salads!
Fit Bird Southwest Salad
Ingredients
- 2 cups salad mix (I use an “herb salad mix” or mix romaine and arugula), rinsed and dried
- ½ cup black beans, drained and rinsed
- ½ cup fresh or canned corn, drained and rinsed
- ½ of a small cucumber, chopped
- ½ cup salsa
- 2 slices avocado
- 2-4 tortilla chips/crisps made from stone ground corn, whole-wheat and/or brown rice, crumbled
- optional: slices of green onion, balsamic vinegar (not vinaigrette) for dressing
Directions
- Throw all ingredients together and munch! Now that was easy, right?
- Nutritional information for entire salad: 310 calories, 7g fat, 624 mg sodium, 16g fiber, 15g protein

Oooh, that looks delish. I’ll definitely have leftover veggie salad where I just empty the veg drawer into a big bowl of lettuce and dressing. Nom nom nom.
I did some VO for our game and I thought I’d be a slam dunk for the russian accent since I’m 50% russian. Not so much. I knocked out a decent monster voice and asian accent though…

My go-to salad add-ins are beets, garbanzo beans, black olives, and shredded carrots.
I’ve never been caught with a fake accent, but whenever I’m talking with someone who does actually have one, I somehow start to pick it up myself! I feel bad and always have to explain to the person that I’m not making fun of them, I just can’t help that my voice mirrors their accent!
That salad does look yummy! Since I am low carb I do a taco salad often: lean grass fed beef browned with a bit of taco seasoning, then served over a bed of mixed greens, with chopped tomatoes, maybe some cucumbers and black olives. I use Litehouse Salsa Ranch as a dressing and it is so good!
Go to salad – walnuts, berries, goat cheese and wild greens from my backyard (read: free greens).
I used to fake a brogue when I bar-tended; I worked at an Irish bar, and i found that the combination of red hair and fake accent made for very nice tips. I’ve also pretended to be Russian, French, British and Australian over the years – I may have an identity problem!
