Pumpkin Spice and Everything…Under the Sun

With that loathsome paper behind me, I’ve had some time to decompress. Obviously, that means I’ve spent some time with my favorite generic-named merchant!
Trader Joe’s.
Where I found this …

It may have landed in my oatmeal.
and later in my tea.
And then later….

Yes, yes I did.
Pumpkin Spice Tofu
Serves 2 (Or one Cranky One)
Ingredients
- Around 8 ounces firm tofu
- 1 tbsp. unmodified potato starch
- 1 rounded teaspoon pumpkin spice
Directions
- Spray a pan with non-stick cooking spray; set aside
- Drain and dry tofu. Chop into bite sized pieces
- Mix potato starch and pumpkin spice together in a medium-sized bowl
- Spray tofu bites with non-stick cooking spray and then mix in spice mixture
- Heat pan over medium-high heat, then add tofu and cook until browned and crisp to your liking
So weird. And yet so delicious! I enjoyed it with a salad and a sesame seed dressing.

You are a genius! I freaking LOVE this idea. We won’t have a Trader Joe’s here in Maine until later this month but the day it opens I’m going to be heading there and this WILL be on my list of things to buy. The oatmeal and the tofu both sound amazing. Thanks for the great idea.
