My Favorite Trader Joe’s Meal

…this week :)


What you need:

  • 1/2c organic black beans (if using canned, drain & rinse them)
  • 1 Ezekiel Sprouted Whole Grain Tortilla
  • 1 tbsp eggplant hummus
  • 1 tbsp spicy peach salsa
  • 1 1/2c spinach

What you do:

  • Microwave beans for 35 seconds, set aside
  • Heat the tortilla over the stove top (be careful, sprouted products burn quickly and you don’t really want to heat it too long since you want to keep as many “living” nutrients as possible)
  • Place all your goodies on the heated tortilla, wrap up & devour!
  • Nutritional info.: 290 calories, 4.5g fat, 697.5mg sodium, 11g fiber, 3g sugars, 15g protein; 30% DV of Iron!

Note: Tea bought from Target; wish it was organic; & it does not make me sleepy! The Whole Grain Drink has a little more calories and fat than the unsweetened Almond Breeze I usually love, however, this drink is fortified with vegan sources of B12 (20% of DV) and the Almond Breeze is not. Winning!

Currently losing the battle to stress and worry, but trying to be positive and to find humor in everything. The good thing about tutoring is I’m never out of fodder for laughter :D These kids….

Sounds good! Love everything at Trader Joe’s!

I love getting the packages of Brussels sprouts at Trader Joe’s. They’re pre-cut, so no extra work! I just bought a Blood Orange Olive Oil at a specialty store. Mix that with some fresh ground pepper on the Brussels Sprouts and it’s perfect!

I’m eatin’ quesadillas like it’s my job (baybels, mushrooms, organic peppers & onion, salsa, Greek yogurt = amazingness!) and lots of rice + bean combos!

YUMMM! Thank you! I have been packing this for my lunches at work. I have seen you reference Ezekiel products quite few times, and now I know why I never saw the tortillas at TJ’s…they are on the bottom shelf and each time I have gone there specifically seeking them out, there are barely any left and if standing, the space looks empty (the packages are stacked in the back). I am loving the Whole Grain Drink, as well. Dairy and my body are not great friends… I have been straying away from a lot of dairy and the things that have helped curb any cravings are hummus and Almond Breeze. I have been struggling with borderline anemia since pregnancy, have been making great strides in modifying my diet the past few months. The Whole Grain Drink is very delicious, and I am finding myself loving this more than Almond Breeze. Makes yummy pseudo-horchata concoctions.
