Vegan Udon Noodles Three Ways

Nearly two years ago, I found these udon noodles from Costco and loved making soups with them. Over the past few weeks, I’ve rekindled my love for them and wanted to share a few ways I’ve been enjoying ‘em…
Nutritional Info., 1/2 individual package: 120 calories, 0g fat, 235mg sodium, 1g fiber, 3g protein; Ingredients: water, organic wheat flour, organic tapioca starch, sea salt, lactic acid. Obviously, these noodles would be more healthful if they were made with whole wheat. But I figure that since I usually use them as a topping for my plates of veggies, they’ll get a hall pass. If you’d prefer whole wheat udon noodles, you can find the Eden brand whole wheat version at Whole Foods.
